2 Shimo Laodie 石磨老爹

The most distinguishing feature of steamed rice rolls in this restaurant is the rice milk - chang fen’smost important crude ingredient - that is ground with stone here. Producing rice milk in this traditional way can help retain most of the rice's healthy properties and give the steamed rice rolls a more dense and smooth feel in the mouth. This, however, inevitably makes the steamed rice rolls’ skin thicker, which is not liked by everyone. This restaurant serves only steamed rice rolls and porridge, both of which are warmly applauded by its customers. Covered with fresh and sweet soy sauce and home-made chili sauce, the steamed rice rolls here have an elastic skin and succulent meat stuffing that create a uniquely flavorful taste, leading to a lingering aftertaste. Porridge is nicely cooked with an appropriate duration and degree of heating, creating a round feel in the mouth with a soft, thick and pulpy texture.

Two policies need to be pointed out: At "Yuanji" only cash is accepted, and self-service is required. That means you must get your food yourself instead of depending on the waiters.

Although the decoration is very crude and the surrounding is a little bit messy, there are never empty seats at mealtimes. This kind of prosperity and popularity result from not only the restaurant’s prices, but also because pf its steamed rice rolls’ smooth and flexible skin, tender and ample fillings, refreshing soy sauce and — the icing on the cake — its exclusive soybean paste.

With home-ground rice milk and chopped green onions embedded inside, the rice skin tastes not very slithery but extremely crisp. You also can find the flavor of aromatic rice in these chang fen. 7 Suiyin Changfen 穗银肠粉

"Suiyin" is another traditional steamed rice roll restaurant in Guangzhou. Its chang fenis produced on scene in an open kitchen where customers can see the entire process. The steamed rice rolls here have moderately thick skins with a soft and sticky texture and stuffing meat that is pickled, although without giving up the fresh feel in the mouth. The soy sauce found a great balance between salty and sweet, and the oil used is just the right level without making you feel greasy or dry.

One negative here is that due to the restaurant’s great popularity and small scale, you should be mentally prepared to wait in a long queue.
